Here is my recipe for Lentil Soup with Cumin. It mostly comes from "The Everything Vegetarian Cookbook" but I have changed some things around! I hope you enjoy it. I think that it makes a very good soup!
2 Carrots
2 stalks of Celery
1 white onion
2 potatoes
1 tsp of cumin
1 tbsp of garlic salt
1 cup lentils
8 cups vegetable stock
pepper to taste
Cut up vegetables into small pieces. Heat up enough oil to coat the bottom of your pan and add vegetables along with the spices. Cook for about 5 minutes. Add lentils and vegetable stock. Bring to a boil. Reduce to medium low for a simmer. Simmer for one hour and then enjoy!
The cookbook says to serve it with some sour cream, but I never have. You certainly could if you wanted to cool it down!
PS-- You might have to adjust the spice levels to your own personal preference!
